This isn’t so much just a Weight Watchers Cinnamon Roll Casserole. It’s so delicious, it’s not “diet” tasting in any way! We like to make breakfast casseroles on the weekends, and of course for the holidays, too!

Weight Watchers Cinnamon Roll Casserole

1 (17.5 oz.) can refrigerated reduced-fat cinnamon rolls, icing reserved
4 eggs
⅓ cup fat-free milk + 2 Tablespoons for icing
1 Tbsp. cinnamon
1 tsp. vanilla

Makes 8 Servings.

Sometimes it’s a bit hard to find the reduced fat cinnamon rolls in the stores. Every once in a while, I just can’t. So I just use my 2 ingredients dough instead to make the cinnamon rolls.

If you do end up making my 2 ingredients dough recipe there are a few more things to know:

  1. I make one batch of 2 ingredients dough, which is a bit less dough that store bought cinnamon rolls. So, I use a 9″x9″ pan when I’m making my own dough. You can either use a smaller pan or instead make two batches of 2 ingredients dough which will yield enough dough to use a 12″x9″ pan.
  2. If you do double the recipe, remember to add the additional points as well to your serving sizes.
  3. If you make the cinnamon roll casserole using 2 ingredients dough, you won’t have the store bought vanilla icing that goes on the top of the casserole once it’s done baking. That is no problem. My Weight Watchers version is to mix 1/2 cup powdered sugar, 2 tablespoons plain Greek yogurt and 1/4 tsp vanilla together in a bowl. Voila, you now have your iced topping!
  4. Once your casserole is done baking, you can pour the icing right on top and let it sit 20+ minutes.

Preheat oven to 350 degrees. Cut each cinnamon roll into sixths.

Spray casserole dish. Add cinnamon roll pieces.

Whisk eggs, 1/3 cup milk, cinnamon, and vanilla in a bowl.

Pour egg mixture over cinnamon rolls.

Bake for 35 minutes or until golden brown.

Add a little milk to icing to thin it out. Whisk or blend with mixer. Pour icing over casserole. Or, if you are making your own Weight Watches icing, mix 1/2 cup powdered sugar, 2 tablespoons plain Greek yogurt and 1/4 tsp vanilla extract in a bowl and stir.

Ingredients

  • 1 17.5 oz. can refrigerated reduced-fat cinnamon rolls, icing reserved

  • 1 Tbsp. cinnamon
  • 1 tsp. vanilla

Instructions

  • Preheat oven to 350 degrees. Cut each cinnamon roll into sixths.

  • Spray casserole dish. Add cinnamon roll pieces.

  • Whisk eggs, 1/3 cup milk, cinnamon, and vanilla in a bowl.

  • Pour egg mixture over cinnamon rolls.

  • Bake for 35 minutes or until golden brown.

  • Add a little milk to icing to thin it out. Whisk or blend with mixer. Pour icing over casserole.

IF YOU ARE USING 2 INGREDIENTS DOUGH:

  • Make the dough using my 2 ingredients dough recipe. The dough is ready to use as soon as you roll it, but you can chill it in the fridge for 20 minutes to make it easier to handle if you like.

  • Roll the dough out using a rolling pin on parchment paper with a touch of flour to help with sticking.

  • Roll dough out into a rectangle shape or even an oval is fine.

  • Now take the shorter edge of the dough and roll it up, tootsie roll or cigar style.

  • You should end up with one long, rolled up piece of dough.

  • Starting in the middle of the long roll of dough, cut the roll in half, then half each side again, and then half each piece again.

  • You should end up with 8 pieces or rolled up dough.

  • Now place all the pieces in a 9"x9" baking pan (2 ingredients dough yields less dough) and pour your egg, cinnamon, vanilla mixture all over the top. Make sure each piece is drenched by using a spoon to cover.

  • Bake for 35 minutes at 350 degrees or until golden brown

  • While baking, mix 1/2 cups powdered sugar, 2 tbsp plain Greek yogurt and 1/4 tsp vanilla extract in a bowl to make the icing.

  • Remove from oven and pour icing over the top,

  • Let sit 20 minutes, serve and enjoy!

    WOW! I just found your site & tried your Weight Watchers Cinnamon Roll Casserole–yum!!
    You didn’t say what size baking dish you used, so I tried a 9×13. I think that is a little big, so will try a smaller size next time, but the recipe is definitely a keeper!

    I have not made this recipe yet, but in preparation, I built the recipe into my WW. I am using almond milk but otherwise kept the recipe the same. It is coming up 6 points on purple. Just a heads up for anyone planning on making this.
